VEGAN RED CURRY WITH RICE & VEGGIES

coconut milk 250ml
bio coconut oil 1tsp

Read instructions on packaging, unpack & separate waste,
then clean your goods.
Prepare all ingredients and put water to boil.
Separate the broccoli florets from the stalk, and cut the bell
pepper and potatoes. Then, chop the broccoli stalk, onion, garlic,
chillies, cilantro and ginger.
Heat up oil in a tall pot, add rice, and stir until the rice
heats up. Then, add water and let it cook.
Heat up oil in a large pan and stir-fry the broccoli stalks
with the potatoes.
Add onion and garlic, then, add the ginger, chopped cilantro
stalks, and salt to taste.
Top the pan off with the bell pepper and broccoli buds, then add
a little bit of water.
When all the veggies are tender, but still a little crunchy,
add red curry paste.
Pour coconut milk over the veggie stew, and stir until well
combined and creamy.
