VEGAN SESAME RICE WITH SPICY AUBERGINE & CASHEWS

soy sauce
vinegar

rice 120g
cashew nuts 25g
black sesame
chilli
sea salt
bio coconut sugar
Read instructions on packaging, unpack & separate waste,
then clean your goods.
Prepare all ingredients.
Cut the aubergine into sticks and sprinkle with salt. Then,
chop the chilli, garlic & ginger.
Heat up oil in a tall pot, add rice, and stir until the rice
heats up. Then, add water and let it cook.
Heat up oil in a large pan and stir-fry the aubergine.
When the rice is ready, top it off with black sesame seeds,
and stir them in.
Add ginger to the pan, and top it off with garlic and chilli.
Crush the cashew nuts in a mortar.
Add sugar to the stir-fried aubergine, and mix it gently.
Pour soy sauce and vinegar over the aubergine and mix gently again.
