VEGAN PARSLEY ROOT MASH WITH OYSTER MUSHROOMS & RADISH SALAD

white raddish 150g

Read instructions on packaging, unpack & separate waste,
then clean your goods.
Prepare all ingredients and put water to boil.
Cut the parsley root, onion, and oyster mushrooms.
Chop garlic & ginger and cut the radish into thin slices.
Add parsley root rings to the boiling water.
Preheat oil in a pan, slightly fry the onion,
add the oyster mushrooms, and then top off with ginger.
Rinse the boiled parsley rings and mash well.
Fry the garlic until golden and add it to the parsley root mash.
If you'd like an umami flavour, add soy sauce.
Pour a bit of sunflower oil over the radish slices. Sprinkle with
kala namak (black salt) and cayenne pepper or paprika.
Stir a few sesame seeds into the radish salad.
